Nestled in the northeast of the Peloponnese is the region of Fournovouni, Krinidi-Argolida, where the cultivation of the olive tree began over 3,500 years ago. The pristine property of Susan Corcos and James Seferis is located in the heart of this region; 30 acres of south-facing land at an altitude of 150 m, planted with more than 1,000 olive trees; most of them over one hundred years old, all of the Manaki variety.
Dry farming and Susan Corcos' meticulous care result in a limited production of Manaki olives which are traditionally cold-pressed in a 19 th century millstone olive press. James Seferis is also continually working on a hybrid process using state of the art equipment for nutrient/flavor preservation.
Thesaurus Prime Virgin Olive Oil is a product of outstanding quality and authentic taste. As its name defines: “It's a Treasure!” To best preserve these characteristics, Thesaurus oil is bottled unfiltered. As a result, the residue at the bottom of the bottle is natural and totally harmless.
A lemon flavored olive oil with a Seferis process is also available. Although similar oils have been previously produced in France, Italy and Spain, the efforts of the GloCal student groups working on this development in the USA, Greece, Korea and Japan, resulted in this unique taste experience for the palette, as well as for health.
